I've never been to a guitar show. Are there tables from guitar dealers/makers there? Or is it more old historic guitars that you can't buy?

Usually dealers. Some sell new instruments as well, but what you are likely to see are true vintage pieces, and pre-owned instruments. Good deals can be had if you know what you're looking for. Towards the end of the shows I've attended, dealers are actually "ready to deal".
The NAMM show (twice yearly) is where you'll see new instruments unveiled from manufacturers. I've never been, but it's on my "bucket list".
